2 cups chopped broccoli
1 small onion
1 clove garlic
4 tbsp butter
4 tbsp all purpose flour
3 cups water or vegetable stock
1 cup milk
4 tbsp parmesan cheese or to taste ( can omit if desired)
Salt and pepper to taste
•Melt the butter in a saucepan and add the onions and garlic. Cook till onions become translucent.
•Add in the flour and water or vegetable stock. Stir till the flour is cooked or no longer smells like raw flour.
•Add in the broccoli and cover the pan. Let it simmer and keep stirring from time to time till the broccoli is done.
•Pour this mixture in a blender and blend.
•Once done, pour it back to the saucepan, add in the milk, garnish with the cheese, salt and pepper.
•Can add a couple of tablespoons of heavy cream if desired. Serve hot.
